How Much Sodium Metabisulfite to Sanitize Wine Bottles
To sanitize wine bottles, a common practice is to use a sodium metabisulfite solution made by dissolving 1 tablespoon (about 15 grams) of sodium metabisulfite in 1 gallon (about 3.8 liters) of warm water.
- Rinse your wine bottles thoroughly before sanitizing.
- Fill each bottle with the sanitizing solution or swirl it so all interior surfaces are contacted.
- Let it sit for about 1-2 minutes.
- Drain thoroughly and allow to air dry (no need to rinse unless you are sensitive to sulfites).
Note: This concentration is strong enough to kill yeasts, bacteria, and other spoilage organisms but safe for winemaking since the solution is drained from the bottles before use.
