Pull a blue box of “washing soda” off the store shelf. That’s sodium carbonate: Na₂CO₃. You’ll find it in laundry rooms, helping get dirt out of old jeans or fighting grease stuck to baking dishes. This stuff’s strong. Put it in water and it pumps up the pH past 11 in no time. Watch out, though. It stings bare hands, and swallowing even a teaspoon leads to a world of stomach troubles. Reach for the orange box with a sugary cookie on it, you’re pulling sodium bicarbonate—baking soda: NaHCO₃. Stir it into your banana bread mix and watch it fluff up in the oven. It makes sodium bicarbonate much milder. In chemistry class, teachers let students handle baking soda with bare fingers; they wear gloves for the carbonate.

Some confuse the two when swapping recipes. Try making chocolate chip cookies with washing soda and nobody will eat them. The batch turns bitter as lemon peel, and the texture stays odd.
