Not All White Powders Are Created Equal
Walk through a grocery aisle or peek into any science lab and you’ll see plenty of white crystalline powders. Two of the most common are sodium bicarbonate and soda ash. A lot of people get these mixed up, mostly because both powders have “soda” in their names, and both carry sodium in their formula. Even so, their uses and chemistry differ in important ways.
Sodium Bicarbonate: Baking Soda and More
Almost everybody has a small box of sodium bicarbonate stashed away at home. This powder, better known as baking soda, does more than make cookies rise. Stir up sodium bicarbonate in water and you get a mild alkaline solution. Soda ash goes much further, creating a solution that’s almost slippery to the touch.
