Sodium Metabisulfite Dosage for Sterilization
To sterilize equipment and containers in winemaking or homebrewing, sodium metabisulfite is commonly used. The typical dosage is as follows:
- For sanitizing solution: Use 1 to 2 teaspoons (5 to 10 grams) of sodium metabisulfite per gallon (3.8 liters) of water.
- Mix thoroughly until dissolved.
- Rinse equipment with the solution and let it sit in contact for a few minutes.
- For extra effectiveness, you can add a small amount of citric acid (about the same amount as metabisulfite).
For Wine Must or Fruit Juice
- For sterilizing juice or must: Add 50 to 100 mg of sodium metabisulfite per liter (usually about 1/4 teaspoon per 5 gallons/19 liters equals roughly 50 ppm of free SO2).
- Allow the must or juice to rest 24 hours before adding yeast for fermentation.
Always use proper ventilation and avoid inhaling fumes. Use gloves when handling concentrated solutions.
