Sodium Metabisulfite Dosage for Cider
The typical amount of sodium metabisulfite to add to cider is:
- 1 Campden tablet (approx. 0.44g sodium metabisulfite) per US gallon (3.8 L)
- OR
- 0.2 to 0.3 grams sodium metabisulfite powder per US gallon (3.8 L)
This provides about 50 ppm (parts per million) of free sulfur dioxide, which is sufficient for most cider stabilization and protection.
Instructions
- Dissolve the sodium metabisulfite powder in a small amount of water before adding to your cider for even distribution.
- Stir the cider well after addition.
- Wait at least 24 hours before pitching yeast if you are using it for initial juice stabilization.
Note: Adjust the amount if your cider volume is more or less than 1 gallon, or if you want a different level of sulfur dioxide. Most home cider makers use the "1 Campden tablet per gallon" rule.
